[PROP-CORE-004] feat: Adapt AI roles for retail domain

Browse Source 
- Roles: ADMIN, GERENTE_TIENDA, CAJERO, CLIENTE
- Domain-specific tools per role (POS, sales, inventory)
- Retail terminology and Spanish names
